1. Prepare The Bell Peppers

When you buy bell peppers, aim for the large, brightly red ones. They are the sweetest and due to their size it is easier to roast them grates of a gas stove if you don’t want to turn on the oven for just a couple. They can be a bit softer when aged, but still fresh looking, that is going to make them sweeter upon roasting, due to their slightly higher sugar content. Wash them well under the tap or in a bowl of water, then dry them with a paper towel.
